Ice machines
- ice machines should be directly connected to a mains water
supply to ensure that ice is not made from water already infected
by microorganisms
- site in an area free from dirt and dust, preferably off the
ground and in a position which provides adequate ventilation and
easy access
- service the machine in accordance with manufacturer's
instructions
- remove dust and scale regularly
- clean the ice production area regularly - the storage bin
should be updated weekly
- clean all ice handling equipment, such as buckets and tongs or
spoons, regularly throughout the day
- only use ice buckets with lids, which should be replaced
immediately after use
- do not allow ice to be transferred by hand - train staff
in proper handling procedures
- do not store bottles, cans or glasses in the ice intended
for human consumption
